Lamb Skewers with Baked Kumara and Salad

Alternatively, preheat BBQ grill to medium-high (if using) and cook lamb lollipops until browned on all sides and cooked through for 6-7 minutes. Use tongs to turn lollipops. Set aside covered with foil to rest a few minutes.


Ingredients

Kumara

  • 600g kumara

Lamb Lollipops

  • 550g lamb mince
  • 1 Tbsp lamb spice mix
  • ¼ tsp salt
  • 10 bamboo skewers

Salad

  • ½ broccoli
  • ½ punnet cherry tomatoes
  • 2 carrots
  • Juice of ½ lemon
  • 2 tsp olive oil

Lollipop Drizzle

  • 1 tsp runny honey
  • ½ tsp white wine vinegar
  • 1 tsp Dijon mustard
  • ¼ cup mayonnaise

Steps

  1. Preheat oven to 230°C. Bring a medium pot of water to the boil. Soak skewers in water for at least 5 minutes. Slice kumara into quarters lengthways, toss on prepared tray with a drizzle of oil and season. Bake for about 25 minutes, until tender.
  2. Mix lamb, lamb spice mix and salt together in a medium bowl. Divide lamb mince into 10 equal portions, use damp hands to shape into 8cm long sausages. Thread one sausage onto each skewer and set aside.
  3. Heat a drizzle of oil in a large fry-pan on mediumhigh heat. Cook lamb lollipops for 6-7 minutes, turning often, until browned on all sides and cooked through. Set aside, covered, with foil to rest.
  4. While lollipops are cooking, finely chop broccoli. Cook in pot of boiling water for 1-2 minutes then drain and run under cold water.
