Lemon & Herb Chicken Schnitzel with Brussel’s Sprout Caesar

This salad makes loads! Use your extra kumara and bacon to bulk it out and enjoy the leftovers for lunch the next day.


Ingredients

Caesar

  • 100g Brussels sprouts
  • 150g orange kumara
  • ¼ red onion
  • 25g minced bacon
  • 1 tomato
  • 1-2 spring onions
  • 1 Tbsp Caesar dressing

Chicken

  • 150g chicken breast
  • ¼ cup flour
  • 1/8 tsp salt
  • 1 egg
  • 1 Tbsp milk
  • 1 pack lemon and herb crumb

To Serve

  • Remaining Caesar dressing (optional)

Steps

  1. Preheat oven to 230°C. Line an oven tray with baking paper. Cut Brussels sprouts into 0.5cm wedges, and dice kumara and tomato 1cm. Toss Brussels sprouts and kumara with a drizzle of oil on prepared tray and season. Roast for 15-18 minutes, until tender and starting to caramelise.
  2. While veggies roast, pat chicken dry and cut into steaks. To do this, place your hand flat on top of chicken breast and use a knife to slice through horizontally to make two thin steaks. Finely dice onion and set aside.
  3. Mix flour and salt in a bowl; whisk egg and milk in a second bowl; place lemon and herb crumb on a plate. Coat each piece of chicken first in flour, then egg mix, then breadcrumbs, shaking off excess as you go. Set aside.
  4. Heat a drizzle of oil in a medium fry-pan on mediumhigh heat. Cook chicken for about 2 minutes each side (depending on thickness), until cooked through. Reserve pan. Set chicken aside, uncovered, to rest for 2-3 minutes. Wipe pan clean with a paper towel.
  5. Heat a drizzle of oil on medium heat. Cook onion and bacon for 2-3 minutes, until bacon is brown and crispy. Thinly slice spring onion. Place all in a medium bowl, along with roasted veggies, tomato and first measure of Caesar dressing. Toss to combine and season.
  6. To serve, place Brussels sprout Caesar onto a plate and top with lemon and herb chicken schnitzel. Dollop over remaining Caesar dressing (if using).
