Hoisin Beef with Sesame Rice and Asian Greens

Rice wine vinegar works best for this dish.


Ingredients

Sesame Rice

  • 1 tsp sesame oil
  • 2 tsp sesame seeds
  • ½ cup jasmine rice
  • ¾ cup water

Hoisin Beef and Asian Greens

  • 150g beef sirloin (at room temperature)
  • ¼ red onion
  • 1 clove garlic
  • ½-1 baby bok choy
  • 1-2 spring onions, white part only
  • ¼ tsp five spice
  • ¼ cup water
  • 70g hoisin sauce
  • 1 tsp soy sauce
  • ½ tsp vinegar (e.g. rice wine, white wine, cider)
  • 1/3 bag baby spinach

To Serve

  • 1-2 spring onions, green part only
  • 1 tsp sesame seeds

Steps

  1. Heat sesame oil in a small pot on medium heat. Add sesame seeds and cook, stirring constantly, for 1-2 minutes, until golden.
  2. Add rice, water and a pinch of salt and bring to the boil. As soon as it boils, cover with a tight-fitting lid and reduce to lowest heat to cook for 12 minutes. Turn off heat and leave to steam, still covered, for a further 8 minutes. Do not lift lid during cooking.
  3. Pat beef dry, remove any fat, thinly slice and season. Finely dice red onion; mince garlic; trim end 1cm off bok choy and thinly slice; thinly slice spring onions, keeping white and green part separate.
  4. When rice has 8 minutes steam time remaining, heat a little oil in a medium-fry-pan on medium-high heat. Stir-fry beef for 1-2 minutes, tossing often, until browned. Remove from pan then return pan to heat with a little more oil (if necessary). Add red onion, garlic, white part spring onion and five spice. Cook for 1-2 minutes, until soft and fragrant. Add water, hoisin sauce, soy sauce and vinegar and bring to a simmer.
  5. Return beef and any resting juices to pan, along with bok choy and spinach and stir to coat in sauce. Remove from heat and season.
  6. To serve, spoon ¾ cup cooked sesame rice onto a plate. Top with hoisin beef and Asian greens. Sprinkle green part of spring onions and sesame seeds.
