Mint Pesto Crusted Lamb with Kumara and Salad

Mixing a flavoursome sauce with mayonnaise is a versatile way to make a delicious accompaniment – the possibilities are endless!


Ingredients

Kumara and Salad

  • 800g kumara
  • 250g frozen peas
  • ½ cos lettuce
  • 1 Palermo capsicum
  • 1 spring onion
  • Drizzle of vinegar

Crusted Lamb

  • 2 Tbsp mint pesto
  • ¼ cup panko breadcrumbs
  • 600g lamb leg steaks (at room temperature)

Mint Pesto Sauce

  • Remaining mint pesto
  • 3 Tbsp mayonnaise

Steps

  1. Preheat oven to 220°C. Line two oven trays with baking paper. Bring a small pot of water to the boil. Cut kumara into 1cm wedges and toss with a drizzle of oil on first prepared tray. Season and roast for about 25 minutes, until golden and tender. Turn once during cooking.
  2. Add peas to pot of boiling water. Cook for about 2 minutes until bright green and tender. Drain and place in a large bowl. Thinly slice lettuce, capsicum and spring onion. Add to bowl with peas and set aside.
  3. Combine first measure of mint pesto and breadcrumbs in a medium bowl. Pat lamb dry and season. Heat a drizzle of oil in a medium fry-pan on high heat. Cook lamb for about 2 minutes each side, until golden but not cooked through.
  4. Place lamb on second prepared tray and top with breadcrumb mixture, pressing down to adhere. When kumara has 5 minutes cook time remining, cook lamb in oven on rack above kumara for about 5 minutes (depending on thickness), or until cooked to your liking. Set aside to rest.
  5. Combine second measure of mint pesto and mayonnaise in a small bowl. Drizzle salad with olive oil and vinegar, toss to combine and season to taste. Slice lamb thickly.
  6. To serve, divide kumara between plates, top with lamb, a dollop of mint pesto sauce, and serve salad on the side.
