Roast Pumpkin and Bacon Pizzas with Salad

Use a fish slice to help slide the baking paper with pizzas onto preheated trays.


Ingredients

Pizza

  • 200g peeled pumpkin
  • 70g tomato paste
  • 2 Tbsp olive oil
  • 2 pizza bases
  • 1½ cups grated cheese
  • 200g minced bacon
  • ¼ cup cream cheese
  • ¼ red onion (optional, adults)

Salad

  • 1 tomato
  • ½ telegraph cucumber
  • 1 iceberg lettuce
  • Drizzle of balsamic vinegar
  • Drizzle of olive oil

Steps

  1. Preheat oven to 220°C. Preheat one oven tray and line another with baking paper. Dice pumpkin 1cm. Toss pumpkin on lined tray with a drizzle of oil and season. Roast for 10 minutes.
  2. In a bowl mix tomato paste and oil and evenly spread over each pizza base.
  3. Sprinkle over cheese and scatter over bacon. Using a teaspoon, scoop 1cm chunks of cream cheese and evenly place over pizzas. Thinly slice onion and scatter on top (if using). Scatter over roasted pumpkin and season.
  4. Place pizzas onto preheated tray and tray used to roast pumpkin. Cook pizzas for 12-14 minutes, until the bases are crisp and golden around the edges. Swap positioning of trays around halfway through cooking. Season.
  5. While pizzas cook, prepare salad. Dice tomato and cucumber 2cm and thinly slice lettuce. Transfer to a bowl and drizzle with vinegar and olive oil. Season and toss to combine.
  6. To serve, slice pizzas and divide between plates. Serve salad on the side.
