Chicken Tacos with Kumara Roasties and Salad

Prepare and marinade your chicken breast in advance to get a deeper flavour and save some time when cooking your meal.


Ingredients

Kumara

  • 600g kumara

Chicken

  • 550g chicken breasts
  • 1 Tbsp Cajun spice mix
  • 1 tsp olive oil

Slaw

  • 3 Tbsp sour cream
  • 2 Tbsp lemon juice
  • ½ tsp Dijon mustard
  • 2 tsp tomato sauce
  • 1 cos lettuce
  • 1 carrot
  • 1 tomato
  • ½ telegraph cucumber
  • 10 tortillas
  • ¾ cup grated cheese

To Serve

  • ¼ cup sour cream

Steps

  1. Preheat oven to 220°C. Line an oven tray with baking paper. Dice kumara 2cm. Toss on prepared tray with a drizzle of olive oil, season and roast for about 25 minutes until golden and tender. Turn once during cooking to ensure even cooking.
  2. Pat chicken dry and cut into 1cm strips. Place chicken, Cajun spice mix and oil into a medium bowl and toss well to coat.
  3. Heat a drizzle of olive oil in a large fry-pan on medium-high heat. Fry chicken in batches for 2 minutes each side or until just cooked. Set aside, covered to keep warm.
  4. In a large bowl, whisk together first measure of sour cream, lemon juice, mustard and tomato sauce. Roughly chop lettuce; grate carrot; dice tomato 1cm; cut cucumber in half lengthways and thinly slice. Add to bowl with dressing, toss to combine and season to taste.
  5. Wrap tortillas in foil and warm in the oven for 5 minutes.
  6. To serve, place all ingredients in the middle of the table for everyone to help themselves. Fill tortillas with chicken, salad, cheese and a dollop of sour cream. Serve kumara roasties on the side.
