Beef Sirloin Steak with Chips and Béarnaise Sauce

Ingredients
Chips
- 600g potatoes
- 1 tsp chip seasoning
Beef Sirloin
- 550g beef sirloin steaks (at room temperature)
Slaw
- 1 Tbsp mayonnaise
- 2 tsp vinegar
- ½ tsp Dijon mustard
- 1 baby cos lettuce
- 1 carrot
- 1 courgette
- 1 apple
- ¼ red onion (optional, adults)
To Serve
- 60g Béarnaise sauce

Preheat oven to 230°C. Line an oven tray with baking paper. Cut potatoes into 1cm chips. Toss chips with a drizzle of oil and chip seasoning on prepared tray. Cook for about 25 minutes until golden and tender, turning once to ensure even cooking.

Pat beef dry and season. When chips have 10 minutes cook time remaining, heat a drizzle of oil in a large fry-pan on high heat. Cook beef for about 2 minutes each side for medium, or until cooked to your liking. Set aside, covered, to rest.

In a medium bowl, mix mayonnaise, vinegar and mustard. Thinly slice lettuce; grate carrot and courgette; thinly slice apple then cut into thin matchsticks; finely slice onion (if using).

Add veggies to bowl with dressing and toss to combine. Season to taste.

Slice beef thickly against the grain.

To serve, divide chips, slaw and beef sirloin steak between plates. Serve a dollop of Béarnaise sauce on the side.
