Italian Balsamic Chicken with Caprese Pesto Potatoes

Ingredients

Potatoes

  • 600g potato fries
  • 1 punnet cherry tomatoes
  • 1 ball mozzarella cheese
  • ½ pottle basil pesto
  • 1 sachet balsamic glaze (optional)

Chicken

  • 1 pack chicken breast steaks
  • ¼ cup balsamic vinegar
  • 2 tsp Italian spices

Salad

  • 1 courgette
  • 1 bag rocket
  • 1 tsp red wine vinegar

Pesto Sauce

  • ½ pottle basil pesto
  • ¼ cup mayonnaise

To Serve

  • 2 Tbsp basil leaves

Steps

  1. Preheat oven to 230°C. Line an oven tray with baking paper. Drain potatoes and pat dry. Place on prepared tray, in a single layer, drizzle with oil and season. Bake (on second highest oven rack) for about 20 minutes, until tender. Turn halfway through cooking.
  2. Cut cherry tomatoes in half and tear mozzarella into bite-sized pieces. Set aside. Pat chicken dry and place in a bowl along with balsamic vinegar and Italian spices. Season, toss to coat and set aside to marinate.
  3. Peel courgette into ribbons and place in a medium bowl with rocket. Set aside. Combine second measure of pesto with mayonnaise in a small bowl. Season and set aside for serving.
  4. Heat a drizzle of oil in a large fry-pan on mediumhigh heat. Lift chicken out of marinade, add to pan and cook for 2-3 minutes each side (depending on thickness), or until cooked through. Set aside to rest, covered, for 3-4 minutes before slicing thinly.
  5. When potatoes are tender, turn oven to high grill. Sprinkle tomatoes and mozzarella over potatoes, season then grill for 3-5 minutes, until golden and crispy. Remove from oven, drizzle with first measure of pesto and balsamic glaze (if using). Toss salad with vinegar and a drizzle of olive oil and season to taste.
  6. To serve, divide potatoes between plates, top with chicken and dollop with pesto sauce. Sprinkle with basil leaves. Serve salad on the side.
