Chorizo and Feta Quesadillas with Cos Wedge Salad

Ingredients

Quesadillas

  • ½ broccoli
  • 1/3 bag baby spinach
  • 1 clove minced garlic
  • 100g chorizo grind
  • 1 tsp tomato paste
  • 2 Tbsp water
  • 2 tortilla wraps
  • 50g feta cheese

Lime Mayo

  • Zest and juice of ½ lime
  • 1 Tbsp mayo

To Serve

  • ½-1 baby cos lettuce
  • ½-1 tomato
  • ½-1 spring onion
  • 1 Tbsp coriander

Steps

  1. Preheat grill to high. Set aside an oven tray. Finely chop broccoli and thinly slice spinach. Cut lettuce into quarters; finely dice tomato and thinly slice spring onion. Set all aside.
  2. Heat a drizzle of oil in a large fry-pan on mediumhigh heat. Cook garlic, chorizo and tomato paste for 2-3 minutes, breaking up with a spoon, until cooked through. Add broccoli and water and cook for 1-2 minutes, until tender. Remove from heat, season and stir through spinach to wilt.
  3. Place tortillas on a flat surface. Spoon chorizo mixture over half of each tortilla. Crumble over feta and fold tortilla over so you end up with two semi circles. Press down firmly and brush each side with olive oil.
  4. Place quesadillas on reserved tray and grill in oven for 1-2 minutes each side until golden and crispy. Cut each cooked quesadilla in half to serve.
  5. While quesadilla cooks, mix all lime mayo ingredients together in a small bowl. Season and set aside.
  6. To serve, place quesadilla pieces onto a plate. Serve lettuce wedges beside and sprinkle over tomato and spring onion. Drizzle over lime mayo and sprinkle over coriander leaves. Serve any remaining lime mayo with the quesadillas.
