Harissa Lamb with Bulgur, Broccoli and Feta

Ingredients

Harissa Lamb

  • 300g lamb rump steaks (at room temperature)
  • 1 tsp harissa spice mix
  • 1 tsp olive oil

Bulgur

  • ¾ cup bulgur wheat
  • ½ tsp salt
  • ½ carrot
  • Juice of ½ lemon (zest first)
  • ½ tsp harissa spice mix

Broccoli and Feta

  • ½ broccoli
  • 125g frozen peas
  • 50g feta cheese

Lemon Yoghurt

  • Zest of ½-1 lemon
  • 1 pottle yoghurt
  • ½ tsp honey

To Serve

  • 2 Tbsp coriander

Steps

  1. Bring a medium pot of salted water to the boil. Bring a full kettle to the boil. Pat lamb dry and place in a medium bowl with first measure of harissa spice mix and olive oil. Season and mix well to coat. Set aside.
  2. Add bulgur and salt to a heat-proof bowl and cover with boiling water. Cover and leave to soak for 15-18 minutes, until grains are tender. Grate carrot. Drain bulgur well, return to bowl and stir through carrot, lemon juice and second measure of harissa spice mix. Season to taste.
  3. While bulgur cooks, heat a drizzle of oil in a large fry-pan on medium-high heat. Cook lamb for about 3 minutes each side for medium (depending on thickness), or until cooked to your liking. Set aside, covered, to rest for at least 5 minutes before slicing thickly against the grain.
  4. While lamb is cooking, cut broccoli into small florets and cook in pot of boiling water for about 3 minutes. Add peas and cook for a further 2 minutes, until bright green and tender. Drain well and return to pot with feta.
  5. Mash broccoli, peas and feta, and season to taste. In a small bowl, whisk together lemon zest, yoghurt and honey and season to taste. Chop coriander.
  6. To serve, spoon bulgur, broccoli and feta onto plates. Top with slices of harissa lamb, drizzle with lemon yoghurt and sprinkle over coriander.
