BBQ Beef Brisket with Rewena Bread

Ingredients

Fries

  • 400g shoestring fries

Brisket

  • 1 pack BBQ beef brisket
  • 6 rewena bread buns

Beetroot Slaw

  • 2 carrots
  • 1 apple
  • 1 beetroot
  • 2-3 tsp wholegrain mustard
  • 1-1½ tsp white wine vinegar
  • 2 Tbsp mayonnaise

To Serve

  • 1 baby cos lettuce
  • 1 pottle BBQ mayo (optional)

Steps

  1. Preheat oven to 230°C. Bring a medium pot of water to the boil. Line two oven trays with baking paper. Pat fries dry, place on prepared tray in a single layer, drizzle with oil and season. Bake (on second highest rack) for about 15 minutes, until tender.
  2. Turn oven to high grill. Grill fries for 5-10 minutes, until golden and crispy. While potatoes cook, keeping beef brisket in the bag, carefully place into pot of boiling water (making sure beef if completely submerged) and reduce to a fast simmer. Cook for about 18 minutes, until beef is hot through.
