Beef Massaman with Naan Bread & Peanuts

This mild, rich Thai curry is bursting with warmth and flavour. Fragrant, simple and delicious, you’ll fall in love with tonight’s dish. Flavours of coconut, ginger and fresh veggies blend together to create this winter warmer. Use the naan bread to soak up the creamy curry sauce!


Ingredients

Beef Massaman

  • 800g beef braising steaks
  • 1 Tbsp massaman spice mix
  • 1 Tbsp grated ginger
  • 2 cloves minced garlic
  • 25-50g massman curry paste
  • 400g baby potatoes
  • 2 carrots
  • 1 red onion
  • 1 can coconut cream
  • 2-3 tsp brown sugar
  • ½-1½ cups beef stock
  • ½ bag baby spinach
  • 1 tsp soy sauce

Naan Bread

  • 2 garlic naan breads

Cucumber Salsa

  • ½ telegraph cucumber
  • 2 Tbsp coriander
  • 40g chopped peanuts
  • 1 tsp rice wine vinegar

Steps

  1. Pat beef dry, (leave whole for slow cooker or dice 2cm for oven method). In a medium bowl, toss beef with massaman spice mix, ginger, garlic and massaman curry paste. Set aside.
  2. Cut potatoes in half; cut carrots into 2cm batons; cut onion into 2cm wedges. Place veggies with beef in slow cooker/casserole dish, cover and set aside in the fridge.
  3. Preheat oven to 220°C (if using). Line an oven tray with baking paper. Pour coconut cream, sugar and stock (½ cup for slow cooker, 1½ cups for oven) over beef. Cover and cook in slow cooker for 8-9 hours on low or in oven for about 2 hours. Beef will easily pull apart when ready.
  4. When beef is cooked, stir through spinach and soy sauce and set aside to rest for 6-8 minutes. Roughly pull or chop beef for slow cooker and return to sauce.
  5. While beef is resting, place naan breads on prepared tray and heat in oven for about 6-8 minutes, until heated through and golden. Slice each naan into 2-3 pieces. Finely dice cucumber and roughly chop coriander. Place in a medium bowl along with peanuts and vinegar.
  6. Divide beef massaman between bowls and top with cucumber salsa. Serve naan bread on the side.
