Moroccan Beef Meatballs and Kumara Tray Bake

This is a longer recipe but very easy once in the oven. Make the meatballs beforehand to save time on the night.
Ingredients
Beef Meatballs
- 1 apple
- 1 brown onion
- 600g beef mince
- 1 egg
- ¼ cup fine breadcrumbs
- 2 Tbsp Moroccan spice mix
- 1 tsp salt
Kumara
- 800g baby kumara
- 1 courgette
- ¼ cauliflower
- 1 carrot
- ½ Tbsp Moroccan spice mix
- ½ bag baby spinach leaves
Hummus
- 100g hummus
- 3 Tbsp mayonnaise
To serve
- 25g sliced almonds

Preheat oven to 220°C. Line a large, heavy roasting tray or baking dish with a lip and preheat in oven. Grate apple and finely dice onion. Add to a large bowl with all remaining beef meatball ingredients and mix well to combine. With damp hands, roll into golf ball-sized balls.

Cut kumara in half lengthways; slice courgette 2cm; cut cauliflower into small florets; slice carrot 1cm on an angle. Place all veggies in preheated roasting tray along with second measure of Moroccan spice mix and a drizzle of oil. Toss to combine and season.

Add meatballs to tray with veggies and drizzle with oil. Cook for 25-30 minutes, or until kumara is tender and meatballs are cooked through. Turn once during cooking.

In a small bowl, mix hummus and mayonnaise to combine.

When the Moroccan beef meatball and kumara tray bake is cooked, toss through spinach leaves.

To serve, divide Moroccan beef meatball and kumara tray bake between plates. Top with a drizzle of hummus and sprinkle over almonds.
