Lamb Tacos with Sour Cream

Ingredients

Lamb Tacos

  • 1 brown onion
  • 1 carrot
  • 2 tsp taco spice mix
  • 450g lamb mince
  • ½ cup chicken stock
  • ½ tsp balsamic vinegar
  • ¼ tsp salt
  • 1 can mild chilli beans

To Serve

  • 10 wholewheat tortilla wraps
  • 75g baby spinach
  • ¾ cup grated Parmesan cheese

Sour Cream

  • 1 tomato
  • ½ cup sour cream
  • 2½ tsp Mexican spice mix
  • ¼ tsp white wine vinegar

Steps

  1. Preheat oven to 200°C. Finely dice onion and grate carrot. Heat a drizzle of oil in a large fry-pan on medium-high heat. Cook onion for 3-4 minutes, until softened.
  2. Add taco spice mix, lamb mince and carrot and cook for 3-4 minutes, breaking up mince as it cooks, until browned.
  3. Add all remaining lamb taco ingredients to pan and simmer for about 5 minutes, until sauce has thickened.
  4. While mince is cooking, wrap tortillas in foil and warm in oven for 5 minutes. Thinly slice spinach.
  5. Finely dice tomato and place into a small bowl, add all remaining sour cream ingredients and mix well.
  6. To serve, divide tortillas between plates and fill with lamb mixture, spinach, cheese and a dollop of sour cream. Roll up and enjoy.
