Korean Beef Meatballs with Bok Choy and Rice Noodles

Ingredients

Meatballs

  • 1 spring onion
  • 1 pack beef mince
  • 1 Tbsp Korean spices
  • 2 Tbsp sweet chilli sauce
  • ¼ cup flour
  • ½ tsp salt

Rice Noodles

  • 300g rice stick noodles
  • 2 Tbsp sesame oil
  • 2-3 tsp soy sauce

Bok Choy

  • 2 baby bok choy
  • 1 courgette
  • 2 Tbsp water
  • 1 pottle Gochujang sauce
  • ¼ cup beef or chicken stock

To Serve

  • 1 Lebanese cucumber
  • 1 spring onion
  • Drizzle of white wine vinegar (optional)
  • 1 sachet roasted peanuts

Steps

  1. Bring a large pot (with a lid) of salted water to the boil. Thinly slice first measure of spring onion and combine with all meatball ingredients in a large bowl. Use clean hands to roll into golf ball-sized balls and set aside.
  2. Heat a drizzle of oil in a large fry-pan on mediumhigh heat. Cook meatballs for 7-8 minutes, turning regularly, until golden and cooked through. Set aside, covered, to keep warm. Reserve pan.
  3. While meatballs cook, place noodles in pot of boiling water. Stir well to separate strands, cover and turn off heat. Leave for 8 minutes until tender. Drain well and use kitchen scissors to cut noodles in a few places to make them easier to eat. Toss through sesame oil and soy sauce and cover to keep warm.
  4. While noodles cook, separate, rinse and roughly chop bok choy; peel courgette and cucumber into ribbons; thinly slice second measure of spring onions. Set aside separately. Just before serving, toss cucumber and spring onion with a drizzle of vinegar and lightly season with salt (if desired).
  5. When meatballs are cooked, carefully wipe pan clean and return to high heat with a drizzle of oil. Cook bok choy and water for about 1 minute, until bok choy is bright green and wilted. Toss though courgette, Gochujang sauce and stock and cook for about 1 minute, until warmed through. Season to taste.
  6. To serve, place rice stick noodles into bowls and top with bok choy and Korean beef meatballs. Scatter over cucumber and peanuts.
