Lamb Patties with Lebanese Bulgur Salad and Whipped Feta

Ingredients

SALAD

  • 35g bulgur wheat
  • ¼-½ beetroot, grated
  • ½ Lebanese cucumber, diced 1cm
  • 1-2 handfuls baby spinach
  • 25g harissa dressing

PATTIES

  • 125g lean ground lamb
  • 1/8 brown onion, finely diced
  • 1 pack lamb spice
  • 1 egg yolk, whisked
  • ¼ tsp salt
  • ½ tsp oil or spray oil

FETA WHIP

  • 1 Tbsp feta cheese
  • 2 Tbsp yoghurt

TO SERVE

  • 2 tsp chopped walnuts

Steps

  1. Preheat oven to high grill. Set aside an oven tray. Bring a half full kettle to the boil.
  2. Prep & cook salad. Add bulgur and a pinch of salt to a heat-proof bowl and cover with boiling water. Cover and leave to soak for 15-18 minutes, until grains are tender. Drain well through a sieve.
  3. In a medium bowl combine beetroot, cucumber and spinach. Set aside.
  4. Prep patties. In a medium bowl combine all patty ingredients (except oil) and mix well to combine. Divide mixture into two portions and using damp hands, roll into balls then flatten into patties, about 1.5cm thick.
  5. Place patties on reserved tray and brush with oil.
  6. Cook patties. Grill patties for 7-8 minutes, until cooked through. Set aside to rest, covered.
  7. Make feta whip & prep walnuts. Add feta and yoghurt to a small bowl and whisk to combine. Season.
  8. Finish salad. Add bulgur to bowl with vegetables, along with harissa dressing. Toss well and season.
  9. To serve, spoon salad onto a plate. Top with patties, spoon over feta whip and sprinkle over walnuts.
