Lamb Patties with Lebanese Bulgur Salad and Whipped Feta

Ingredients

SALAD

  • 75g bulgur wheat
  • ¼ red onion, thinly sliced
  • ½ beetroot, grated
  • ½-1 Lebanese cucumber, diced 1cm
  • ½ bag baby kale
  • 50g harissa dressing

PATTIES

  • 250g lean ground lamb
  • ½ red onion, finely diced
  • 1 pack lamb spice
  • ½ egg
  • ¼ tsp salt
  • 1 tsp oil or spray oil

FETA WHIP

  • 1 Tbsp chopped walnuts
  • 25g feta cheese
  • ¼ cup yoghurt

Steps

  1. Preheat oven to high grill. Set aside an oven tray. Bring a full kettle to the boil.
  2. Prep & cook salad. Add bulgur and a pinch of salt to a heat-proof bowl and cover with boiling water. Cover and leave to soak for 15-18 minutes, until grains are tender. Drain well through a sieve.
  3. In a large bowl combine onion, beetroot, cucumber and kale. Set aside.
  4. Prep patties. In a medium bowl, combine all patty ingredients (except oil) and mix well. Divide mixture into 4 and using damp hands, roll into balls then flatten into patties, about 1.5 cm thick.
  5. Place patties on reserved tray (leaving a small space for walnuts) and brush with oil.
  6. Cook patties. Grill patties for about 8 minutes, then add walnuts to tray and cook a further 1 minute, until walnuts are toasted and patties are cooked through. Place walnuts in a medium bowl and set patties aside to rest, covered.
  7. Make feta whip. Add feta and yoghurt to bowl with toasted walnuts and whisk to combine. Season.
  8. Finish salad. Add bulgur to bowl with vegetables along with harissa dressing. Toss well and season.
  9. To serve, spoon salad onto plates. Top with patties and spoon over feta whip.
