Spicy Lamb Bake With Cheesy Topping and Roasted Veggies

You can make the spicy lamb bake ahead of time or the night before. Simply reheat for 20-25 minutes, at 220ºC. Keep an eye on the Lamb Bake when it’s under the grill because cooking time might vary, depending on how hot your grill is.


Ingredients

KUMARA

  • 200g kumara, sliced into 0.5cm rounds
  • ½ tsp oil or spray oil

TOPPING

  • ½ cup lite cottage cheese
  • 1 egg yolk

LAMB

  • ½ tsp oil or spray oil
  • ½ brown onion, finely diced *
  • 250g lean ground lamb
  • 2 tsp spicy lamb mix
  • Pinch of chilli flakes or cayenne pepper (optional)
  • 1 tsp garlic paste *
  • ½ carrot, grated *
  • 2/ 3 can chopped tomatoes
  • 1 tsp soy sauce
  • ¼ tsp salt
  • ¼ tsp honey

VEGGIES

  • ½ broccoli, cut into small florets *
  • 100g Brussels sprouts, cut into halves or quarters
  • ¼ tsp extra-virgin olive oil

TO SERVE

  • 2 Tbsp chopped parsley

Steps

  1. Preheat oven to 220ºC. Set aside a baking dish (measuring about 15 x 15cm).
  2. To serve, divide lamb bake with kumara topping between plates. Serve veggies on the side and sprinkle over parsley (if using).
  3. Prep & cook kumara. Toss kumara and oil on al lined oven tray and season. Bake for 15-18 minutes, until just cooked but still firm. Set aside
  4. Make topping. Whisk together cottage cheese and egg yolk in a small bowl. Season.
  5. Prep and cook lamb. Heat oil in a medium fry-pan on medium-high heat. Cook onion with a pinch of salt for 2-3 minutes, until softening. Increase heat to high, add lamb and cook for 3-4 minutes, breaking lamb up as it cooks.
  6. Add spicy lamb mix, chilli flakes and garlic paste to pan. Cook for 1 minute. Add carrot, canned tomatoes, soy sauce and salt. Cook on medium-high heat, stirring occasionally, for 2-4 minutes. Stir through honey and cook for about 1 minute. Season.
  7. Bring a small pot of salted water to the boil.
  8. Assemble bake. Switch oven to high grill. Place lamb mixture in baking dish and top with kumara rounds. Spoon over topping. Grill (on middleupper oven rack) for 5-7 minutes, or until golden.
  9. Prep & cook veggies. Add broccoli and Brussels sprouts to pot of boiling water. Cook for 3-4 minutes, until tender. Drain, toss with olive oil and season.
  10. Prep garnish.
