Turkey Patties with Cranberry and Camembert

Ingredients

Potato Salad

  • 1 courgette
  • ½ punnet cherry tomatoes *
  • 600g pre-cooked baby potatoes
  • 1-2 Tbsp mayonnaise

Patties

  • 1 carrot
  • ½ block camembert cheese
  • 1 pack turkey mince
  • 1 pack bacon mince
  • 1 Tbsp turkey seasoning

To serve

  • 1 pottle cranberry sauce

Steps

  1. Preheat oven to 230°C. Preheat an oven tray (on bottom rack of oven).
  2. Prep and cook salad Dice courgette 2-3cm and cut cherry tomatoes in half. Set aside separately. Pat potatoes dry and toss with courgette and a drizzle of olive oil on a lined oven tray. Season with salt and roast for about 15 minutes (on top oven rack), until golden.
  3. Make patties Grate carrot and slice camembert 0.5cm, then cut in half widthways. In a medium bowl, combine carrot, turkey, bacon and turkey seasoning with ¼ tsp salt. Using a ¼ cup measure and clean, damp hands, shape mixture into balls, then flatten, about 1cm thick.
  4. Cook patties Heat a drizzle of oil in a large (preferably non-stick) fry-pan on medium heat. Cook patties, in two batches, for about 1 minute each side, until golden.
  5. Bake patties When potatoes have 7 minutes cook time remaining, move them to bottom oven rack and place patties on preheated tray. Finish cooking patties (on rack above potatoes) for about 3 minutes, until cooked through. Top with camembert and return tray to oven for 1-2 minutes, until cheese has melted.
  6. Make potato salad Add courgette, tomatoes, cooked potatoes and mayonnaise to a bowl, mix to combine and season to taste.
  7. Divide potato salad between plates, top with turkey patties and dollop over cranberry sauce.
