Greek Beef Gyro Bowls with Skinny Fries and Carrot Hummus

Ingredients

Skinny Fries

  • 600g potatoes *
  • 2 tsp Greek spice mix

Greek Beef

  • ½ brown onion
  • 1 carrot
  • ¼ tsp salt
  • 450g beef mince
  • 1 Tbsp Greek spice mix
  • ¼ cup GF beef stock
  • 2 Tbsp GF tomato sauce
  • 1 tsp GF soy sauce
  • ½ bag baby spinach *

Salad

  • 1 tomato
  • ½ iceberg lettuce *
  • 1-2 tsp GF white wine vinegar

To Serve

  • 150g carrot hummus

Steps

  1. Prep and cook fries Preheat oven to 220°C. Cut potatoes into 0.5cm fries and toss with a drizzle of oil and first measure of Greek spice mix on a lined oven tray and season with salt. Roast for 25 minutes, until golden and cooked through. Turn once during cooking.
  2. Prep veggies Finely dice onion and grate carrot
  3. Cook beef Heat a drizzle of oil in a large fry-pan on medium-high heat. Cook onion, carrot and salt for about 3 minutes, until softened. Add beef and second measure of Greek spice mix and cook a further 4-5 minutes, stirring, until browned.
  4. Stir through stock, tomato sauce and soy sauce. Cook a further 3 minutes, stirring, until cooked through and most of the liquid has evaporated. Roughly chop spinach and stir through then remove from heat. Season to taste, if needed.
  5. Prep salad Dice tomato 1cm and thinly slice lettuce. Arrange salad ingredients on a platter and drizzle with vinegar and a little olive oil.
  6. To serve Arrange skinny fries, Greek beef and salad in a bowl. Top with a dollop of carrot hummus.
