Wakanui Beef Scotch with Sesame Roasted Greens, Kumara and Furikake

Ingredients

Kumara Chips

  • 400g golden kumara
  • 1 tsp shiso furikake

Greens and Beef

  • ½ pack broccolini *
  • ½ courgette
  • ½ pack green beans *
  • 1 tsp sesame oil
  • 2 tsp sesame seeds
  • 300g Wakanui beef scotch
  • 1 Tbsp yakiniku sauce

To Serve

  • Remaining yakiniku sauce

Steps

  1. Cook chips Preheat oven to 220°C. Cut kumara into 1cm chips and toss on a lined oven tray with a drizzle of oil. Season and roast in oven for about 25 minutes, until tender and golden. Toss with shiso furikake just before serving.
  2. Prep greens Cut any large broccolini in half and cut courgette into 0.5cm batons.
  3. Cook greens Toss broccolini, courgette and green beans on a second lined oven tray with sesame oil. Season and sprinkle over sesame seeds. When kumara has 12 minutes remaining, roast greens in oven for about 8-10 minutes, until tender and starting to brown.
  4. Cook beef Pat beef dry and season with pepper. Toss in a medium bowl with first measure of yakiniku sauce. Heat a drizzle of oil in a medium fry-pan on medium-high heat. Cook beef for 1-2 minutes each side, until golden.
  5. Transfer beef to tray with greens (moving greens to one side) and cook a further 3-4 minutes (for medium-rare, depending on thickness) or cooked to your liking. Remove beef from oven and set aside to rest, covered, for 2-3 minutes before slicing thinly against the grain.
  6. To serve Divide kumara, greens and slices of beef between plates. Drizzle over remaining yakiniku sauce.
