Mediterranean Fish with Couscous

Ingredients

Mediterranean Fish

  • ¼ red onion *
  • ½ leek *
  • ½ courgette *
  • ½ can cherry tomatoes *
  • ½ cup chicken or veggie stock
  • 30g thyme and parsley
  • Kalamata olives
  • 150g market fish

Couscous

  • 1/3 cup chicken or veggie stock
  • ¼ cup wholemeal couscous

To Serve

  • 50g baby spinach *
  • 1/3 -¼ lemon *
  • 50g feta

Steps

  1. Prep vegetables Thinly slice onion and leek and grate courgette.
  2. Prep fish Pat fish dry and remove any scales or bones. Cut any larger fillets in half and set aside.
  3. Cook couscous Bring second measure of chicken stock to the boil in a small pot. As soon as it boils add couscous and stir. Remove from heat, cover with a lid and steam for about 6 minutes, until grains are tender. Fluff up grains and keep warm.
  4. Start sauce While couscous steams, heat a drizzle of oil in a medium fry-pan on mediumhigh heat. Cook onion and leek for 2-3 minutes, until soft. Add canned tomatoes, stock and olives and bring to a simmer. Season to taste and add fish and courgette. Cook on low for 3-4 minutes, until fish is cooked through.
  5. Prep spinach In a small bowl toss spinach with lemon juice and a drizzle of olive oil. Season to taste.
  6. To serve Spoon couscous onto a plate and top with Mediterranean fish. Crumble over feta and serve with a pile of spinach.
