Beef and Bacon Cheese Burgers with Kumara Fries and Beet Slaw

Ingredients

Kumara Fries

  • 400g red kumara
  • 1 Tbsp olive oil

Burgers

  • ½ red onion *
  • 450g beef and bacon mince
  • 1 tsp GF wholegrain mustard
  • 1 tsp GF soy sauce
  • 1 Tbsp GF tomato sauce

Slaw

  • ½ cos lettuce *
  • 1 beetroot
  • 1 carrot
  • 1 Tbsp extra-virgin olive oil
  • 1 Tbsp GF balsamic vinegar
  • 1 tsp honey

Sweet Chilli Mayo

  • ¼ cup GF mayonnaise
  • 2 teaspoons GF mild sweet chilli sauce

To Serve

  • 1 pack cheddar cheese slices
  • 6 burger buns
  • ¼ cup GF tomato sauce (optional)

Steps

  1. Cook kumara Preheat oven to 220°C. Scrub kumara and cut into 1cm fries. Toss with a drizzle of olive oil on a lined tray, season and roast for 25-30 minutes, until crispy. Turn once during cooking.
  2. Make burger patties Finely dice onion. Combine all remaining burger ingredients in a large bowl, season with pepper and mix well using clean hands. Use a 1/3 cup measure to scoop out mixture and shape into 1cm thick patties. Use your thumb to make a small indent into the centre of each patty. Place onto a plate and into the fridge to firm up while you make the slaw.
  3. Prep slaw Thinly shred lettuce and peel and grate beetroot and carrot. Add all to a medium bowl with remaining slaw ingredients and mix well. Season to taste. In a small bowl, combine sweet chilli mayo ingredients and mix well. Set aside.
  4. Cook burger patties Heat a drizzle of oil in a large fry-pan on medium heat. Cook patties for 3-4 minutes each side, or until just cooked through. Turn oven to high grill. Once cooked, push kumara fries to one side of tray and place patties onto clear side of tray, top with a slice of cheese and cook for 1-2 minutes, until cheese is melted.
  5. Toast buns While the patties are cooking, slice buns in half horizontally and place, opened, on a lined tray. Warm in oven (on rack below kumara) for 4-5 minutes.
  6. To serve Spread buns with tomato sauce or sweet chilli mayo, top with slaw, a patty and finish with the bun lid. Serve kumara fries and extra slaw on the side. Use any leftover sweet chilli mayo for dipping
