Sumac Chicken with Moroccan Bulgur and Green Hummus

Ingredients

Moroccan Vege

  • ¼ cauliflower *
  • ½ red onion *
  • 1 carrot
  • ¼ cabbage *
  • 1-2 tsp Moroccan spice mix
  • 50g feta cheese *

Chicken

  • 300g chicken breasts

Bulgur

  • ¾ cup chicken stock
  • ½ tsp Moroccan spice mix
  • ¾ cup bulgur wheat

Hummus

  • 50g green hummus
  • 1 Tbsp mayo

To Serve

  • 25g sliced almonds
  • 1-2 tsp sumac

Steps

  1. Prep and cook veggies Preheat oven to 230oC. Cut cauliflower into medium florets; cut onion into 1cm wedges; cut carrot into 1x5cm sticks; thinly shred cabbage until you have 1-2 cups worth. Toss cauliflower, onion, carrot and first measure of Moroccan spice mix with a drizzle of oil on a lined oven tray. Season veggies and roast for 20-25 minutes, until golden.
  2. Prep and cook chicken Pat chicken dry and season. Heat a drizzle of oil in a medium fry-pan on medium-high heat. Cook chicken for 3 minutes each side until golden but not cooked through.
  3. Finish chicken Place chicken on tray with veggies and roast for 6-8 minutes (depending on thickness), until chicken is cooked through. Set chicken aside covered, to rest, before slicing thinly. Reserve pan.
  4. Prep and cook bulgur Bring stock with second measure of Moroccan spice mix to the boil in a small pot on high heat. Once boiling, turn off heat, add bulgur and a pinch of salt, stir, cover and leave for 5-6 minutes, then fluff up grains with a fork.
  5. Cook cabbage Return reserved pan to medium-high heat with a drizzle of oil. Cook cabbage for about 2 minutes until tender. When veggies are cooked, add cooked cabbage to tray and toss to combine. Crumble over feta. Combine hummus and mayo in a small bowl.
  6. To serve, divide bulgur and veggies between plates and top with sliced chicken and a dollop of hummus. Sprinkle over almonds and sumac.
