Japanese Pork and Miso Ramen

Ingredients
Japanese Pork
- 600g pork rump steaks
- 1 tsp honey
- 2 Tbsp soy sauce
- 1 clove minced garlic
- 1 tsp grated ginger
- ½ tsp salt
- 2 tsp olive oil
Miso Ramen
- 2 carrots
- 1 brown onion
- 1 baby bok choy
- 1½ Tbsp grated ginger
- ¼ tsp salt
- 50g miso ramen paste
- 1 cup chicken stock
- 2 cups water
- 2 Tbsp soy sauce
- 320g udon noodles
To Serve
- 100g mung bean sprouts

Prep pork Bring a large pot of salted water to the boil. Pat pork dry and place in a shallow bowl with all remaining Japanese pork ingredients. Toss well to coat and set aside for about 10 minutes to marinate.

Prep veggies Cut carrots in half lengthways and thinly slice. Thinly slice onion and white part of bok choy and roughly chop green part (set aside separately).

Cook pork Heat a drizzle of oil in a large, deep fry-pan on medium-high heat. Cook pork for 2-3 minutes each side (depending on thickness), until just cooked through. Set aside, to rest, covered for at least 5 minutes.

Cook veggies Wipe pan clean and return to medium-high heat with a drizzle of oil. Stir-fry carrots, onion, ginger and salt for about 2 minutes, until starting to soften. Add miso ramen paste, stock and water and bring to a simmer. Add white part of bok choy and cook for about 1 minute, until tender. Remove pan from heat, stir through green part of bok choy and soy sauce. Season to taste with pepper.

Cook noodles Place noodles in pot of boiling water, stir with a fork to separate strands and cook for 4-5 minutes, until tender. Drain well and rinse under warm water to prevent sticking. Thinly slice pork.

To serve, divide noodles between bowls, top with vegetables and sliced pork and pour over miso ramen broth. Sprinkle with mung bean sprouts.
