Mustard Roast Beef with Roasted Potatoes, Greens and Gravy

Ingredients

Potatoes

  • 800g potatoes
  • 1 Tbsp potato herb mix

Beef

  • 1 Tbsp wholegrain mustard
  • 1 clove minced garlic
  • ½ tsp salt
  • ¼ tsp ground black pepper
  • 600g beef rump steaks

Greens

  • 1 broccoli
  • 250g frozen peas *
  • 1 bag baby spinach

Gravy

  • 1 Tbsp butter
  • 1½ Tbsp flour
  • 1 cup beef stock

To Serve

  • 100g horseradish cream

Steps

  1. Prep and cook potatoes Preheat oven to 230oC. Bring a medium pot of salted water to the boil. Dice potatoes 2cm and toss with potato herb mix and a drizzle of oil on a lined oven tray. Roast for about 25 minutes until tender.
  2. Prep and cook beef In a small bowl, mix mustard, garlic, salt and pepper with a drizzle of oil until smooth. Heat a drizzle of oil in a fry-pan on high heat. Pat beef dry and season with salt. Add beef to pan and sear for about 2 minutes on all four sides (beef does not need to be cooked through).
  3. Finish beef Place seared beef on second prepared tray and spread over mustard mixture to coat. Roast beef for 7–9 minutes for medium-rare (depending on thickness), or until cooked to your liking. Remove from oven and cover to rest for about 5 minutes. Slice thinly against the grain.
  4. Prep and cook greens Cut broccoli into small florets. Add broccoli and peas to pot of boiling water and cook for 2–3 minutes. Drain, fold through spinach and keep warm.
  5. Make gravy Return same fry-pan used to cook the beef to a medium heat. Add butter and flour and cook, stirring for 1 minute. Reduce heat to low, whisk in beef stock and simmer for 3–4 minutes, or until gravy has thickened. Season to taste.
  6. To serve, divide roasted potatoes, mustard roast beef and greens between plates. Pour over gravy and serve horseradish cream on the side.
