Greek Lamb Pizza with Yoghurt Drizzle and Sesame Cauliflower

Ingredients

Pizzas

  • 1 red onion
  • 1 capsicum
  • 70g tomato paste
  • 2 Tbsp sweet chilli sauce
  • 3 pizza bases
  • 2 cups grated Colby cheese *
  • 450g Greek lamb mince
  • 50g feta cheese

Sesame Cauliflower

  • ¼ cauliflower *
  • 2 carrots
  • 1-2 cloves minced garlic
  • 1 Tbsp butter (optional)
  • 15g sesame seeds
  • 2 tsp vinegar
  • 2 tsp sweet chilli sauce

Yoghurt Drizzle

  • 150g yoghurt
  • 1 tsp vinegar
  • 1 tsp honey

Steps

  1. Prep toppings Preheat oven to 220oC. Preheat two oven trays (or pizza stones if you have them). Thinly slice onion and finely dice capsicum. In a small bowl, combine tomato paste, sweet chilli sauce and a drizzle of olive oil until smooth. Set aside.
  2. Top pizzas Place pizza bases on a clean bench. Divide tomato mixture between bases and spread to cover. Sprinkle cheese, onion and capsicum evenly over bases. Using clean hands, tear away small amounts of lamb mince and dot on top. Crumble over feta cheese and season.
  3. Bake pizzas Slice one pizza in half. Carefully place one and a half pizzas on each preheated tray (or stones). Cook pizzas for 12–14 minutes, until base is crisp and golden around the edges and mince is cooked. Swap trays halfway to ensure even cooking
  4. Prep and cook cauliflower Cut cauliflower into small florets and peel carrots into ribbons. Heat a drizzle of oil in a large fry-pan on medium-high heat. Cook cauliflower for about 3 minutes until nearly tender.
  5. Add garlic, butter and sesame seeds to pan and cook a further 1 minute until fragrant. Remove from heat, add carrot, vinegar and sweet chilli sauce. Toss to combine and season to taste. In a small bowl, combine yoghurt, vinegar and honey until smooth. Slice each pizza into 6-8 wedges.
  6. To serve, divide slices of pizza and sesame cauliflower between plates. Spoon yoghurt drizzle over pizza and cauliflower just before serving.
