Chicken and Hummus Flatbreads

Ingredients

Veggies

  • 1 carrot
  • 1 parsnip
  • 1 Tbsp honey
  • 1 capsicum

Chicken

  • 550g chicken thighs
  • 1 Tbsp chicken flatbread spice mix
  • ½ tsp salt

Slaw

  • 1 Tbsp olive oil
  • 1 tsp Dijon mustard
  • 1 tsp white wine vinegar
  • ¼ cabbage *
  • 1 tomato
  • 5 kebab breads

To Serve

  • 1 pottle hummus
  • 1 pottle chicken flatbread sauce (optional, adults)

Steps

  1. Prep and cook veggies Pre-heat oven to 230oC. Cut carrot and parsnip into matchsticks. Toss both on a lined oven tray, with honey and a drizzle of olive oil. Season and cook for 20-25 minutes, or until crispy and tender. Turn once during cooking. Cut capsicum into matchsticks. Set aside.
  2. Prep chicken When carrot and parsnip have 10 minutes cook time remaining, toss capsicum through and return to oven. Cook for remaining 10 minutes, until tender. Pat chicken dry. Add chicken to a medium bowl with chicken flatbread pice mix, salt and a drizzle of olive oil. Mix well, then set aside.
  3. Prep slaw In a medium bowl, mix together olive oil, mustard and vinegar and apinch of salt. Thinly slice cabbage, until you have about 3 cups worth. Place on top of dressing. Do not mix. Dice tomato 1cm, add to bowl with cabbage.
  4. Cook chicken Heat a drizzle of oil in a large fry-pan on medium-high heat. Add chicken and cook for 4-5 minutes each side, or until cooked through. Set aside, covered, to rest for a few minutes. Pull chicken apart with two forks or roughly chop. Toss back through resting juices.
  5. Warm breads and mix slaw Place kebab breads directly on the oven shelf underneath veggies. Cook for 1-2 minutes, or until warmed through, but not crispy. Toss all slaw ingredients together and season to taste.
  6. Place all ingredients in the centre of the table, for everyone to help themselves. Spread a dollop of hummus on your flatbread, top with slaw, veggies and chicken. Drizzle over flatbread sauce (if using).
