Pork Bites with Roasties and Dipping Sauces

Ingredients

Roasties

  • 600g potatoes

Pork

  • 550g pork rump steaks
  • 2 tsp pork spice mix
  • ½ tsp salt
  • 2 Tbsp cornflour
  • 1 egg
  • 1½ cups panko breadcrumbs

Salad Dressing

  • 1 pottle salad dressing

Salad

  • 1 baby cos lettuce
  • 1 carrot
  • 1 apple

Dipping Sauces

  • 1-2 tsp mild sweet chilli sauce (optional)
  • ¼ cup mayonnaise
  • 50g plum sauce (adults)

Steps

  1. Prep and cook potatoes Preheat oven to 220oC. Cut potatoes into 1cm wedges. Toss with a drizzle of oil and season on a lined oven tray. Cook for 25-30 minutes, until golden and crispy. Turn once, to ensure even cooking.
  2. Prep pork Trim excess fat from pork, then dice 2cm. Pat dry and add to a medium bowl, along with pork spice mix and salt, then toss to coat. Add cornflour and continue tossing, to coat well. In a small bowl, whisk egg, then add to bowl with pork. Toss gently to coat well.
  3. Crumb pork Place breadcrumbs in a shallow bowl. Place handfuls of pork into the breadcrumbs and coat well. Set aside while you make the salad.
  4. Prep salad Add salad dressing to a medium bowl. Tear lettuce leaves into smaller pieces; grate carrot; cut apple into matchsticks (or grate). Add to bowl with dressing, toss to combine and season to taste.
  5. Cook pork Heat a drizzle of oil in a large fry-pan on medium-high heat. Cook pork in two batches, for about 4 minutes, turning to cook on all sides, until golden. Wipe fry-pan out between batches and add more oil as needed. Transfer pork a to second lined oven tray and bake for about 5 minutes, until cooked through
  6. To serve, divide wedges, pork bites and salad between plates. Dollop dipping sauces on the side.
