Beef and Pork Burgers with Beetroot Feta and Kumara Chips

Ingredients
ONIONS
- 2 brown onions, thinly sliced
KUMARA
- 400g red kumara, cut into 1cm rounds
BURGERS
- 500g lean ground beef and pork
- 1 egg
- 1 pack burger spice
BEETROOT FETA
- 1 beetroot, grated
- ¼ cup yoghurt
- 50g feta cheese
TO SERVE
- 1 iceberg lettuce, leaves separated
- 1 tomato, thinly sliced

Preheat oven to 230ºC.

Prep & cook onions. Heat 1 tsp oil in a large frypan on medium heat. Cook onions with a pinch of salt for 8-10 minutes, stirring occasionally, until golden and caramelised. Set aside.

Prep & cook kumara. Toss kumara with 1 tsp oil on a lined oven tray, season and bake (on middle oven rack) for 15 minutes to begin with.

Prep & cook burgers. In a medium bowl mix beef and pork, egg, burger spice and ½ tsp salt together until well combined. With damp hands, divide mix into 8 and shape into 1.5cm thick patties.

Cook patties for 8-10 minutes, until golden brown and cooked through. Remove from oven and rest, covered. Continue to grill kumara for about 1 minute, until golden.

Prep beetroot feta. Grate beetroot and place in a medium bowl. Add yoghurt and crumble in feta, mix to combine and season.

Prep garnishes.

To serve, lay out lettuce leaves and spoon beetroot feta onto leaves. Place a kumara round and a patty in each lettuce leaf, top with tomato and caramelised onion. Serve remaining kumara on the side.
