Malai Kofta with Spiced Vegetable Pilau

Ingredients

Pilau

  • ½ brown onion
  • 1 carrot
  • ½ cherry tomatoes
  • ½ pack mushrooms
  • ¼ bag baby spinach
  • 1 clove minced garlic
  • ¾ cup basmati rice
  • 1 pack spiced pilau mix
  • 1¼ cups water

Malai kofta

  • 1 pack malai kofta and sauce

To serve

  • ½ bunch coriander, chopped
  • 1 pack sliced almonds (optional)

Have Handy

  • olive oil
  • pepper
  • salt

Steps

  1. Prep pilau Finely dice onion; grate carrot; cut tomatoes and mushrooms in half; roughly chop spinach.
  2. Cook pilau Heat a drizzle of oil in a medium pot (with a lid) on medium heat. Cook onion, carrot, garlic and ½ tsp salt for 3-4 minutes, until golden. Stir through rice to coat in oil. Cook for about 1 minute, until rice is starting to look translucent.
  3. Stir in spiced pilau mix, tomatoes, mushrooms and water. Bring to the boil, cover with a lid and reduce to lowest heat to simmer for 14 minutes. Remove from heat and steam, covered, for 8 more minutes. Do not lift lid at any time during cooking.
  4. Cook malai kofta While rice steams, pour malai kofta into a small pot and cover with a lid. Cook on low heat for about 10 minutes, stirring occasionally, until warmed through.
  5. Finish pilau Stir spinach through cooked rice, cover and leave for 1-2 minutes to wilt. Season to taste.
  6. Serve pilau into bowls, then top with malai kofta, sauce, coriander and almonds.
