Lamb Leg Steaks with Pumpkin Mash and Apple Mint Salsa

Ingredients

Pumpkin Mash

  • 1 pack pumpkin
  • 2 Tbsp milk
  • 1 Tbsp butter

Lamb

  • 1 pack lamb leg steaks
  • 2 tsp soy sauce
  • Juice of ½ lemon
  • 1 tsp mustard

Apple mint salsa

  • 2 Tbsp mint leaves
  • 1 apple
  • 1 tsp vinegar
  • 1 tsp honey

To serve

  • 1 broccoli
  • 1 carrot

Steps

  1. Cook pumpkin Bring a large and a medium pot of salted water to the boil. Cook pumpkin in pot of boiling water until very soft, 12-15 minutes. Drain and mash with butter and milk until smooth and season to taste.
  2. Marinate lamb Pat lamb dry and place in a bowl with soy sauce, lemon juice, mustard and a drizzle of olive oil to marinate.
  3. Make salsa Finely chop mint and finely dice apple. Place both in a medium bowl with vinegar and honey, stir well and season. Bring a medium pot of salted water to the boil.
  4. Cook Lamb Heat a large fry-pan on medium-high heat, remove lamb from marinade and cook for about 4-6 minutes each side for medium (depending on thickness), or until cooked to your liking. Transfer to a plate, covered to rest for 4-5 minutes, then slice thinly.
  5. Prep and cook veggies Cut broccoli into small florets and cut carrot in half lengthways and thinly slice. Cook in medium pot of boiling water for 3-4 minutes, or until tender, then drain.
  6. To serve Top mash with slices of lamb and salsa and serve veggies on the side.
