Bacon and Basil Pesto Pasta with Caesar Salad

Ingredients

Pasta

  • 350g spiral pasta
  • 250g streaky bacon
  • ½ bunch broccolini
  • 1 courgette
  • ½ punnet cherry tomatoes
  • 80g basil pesto

Salad

  • 1 baby cos lettuce
  • ½ block Parmesan cheese, shaved
  • 50g Caesar dressing

Steps

  1. Cook pasta Bring a medium pot of salted water to the boil. Add pasta to pot of boiling water and cook for 10-12 minutes, until just tender. Drain well and return to pot with a drizzle of oil to prevent sticking.
  2. Prep and cook bacon and veggies While pasta cooks, heat a drizzle of oil in a large fry-pan on high heat. Dice bacon 1cm and cook for 3-4 minutes, until golden. While bacon cooks, roughly chop broccolini into bite sized pieces and grate courgette.
  3. Add broccolini to pan and cook for about 1 minute. Add cherry tomatoes and cook for 1-2 minutes, until broccolini is tender and tomatoes are warmed through.
  4. Remove pan from heat and add drained pasta, courgette and basil pesto. Toss well and season.
  5. Prep salad Roughly chop lettuce and add with remaining Caesar salad ingredients to a medium bowl. Toss and season.
  6. Serve pasta in bowls and serve salad on the side.
