Italian Lamb Meatballs with Couscous and Feta Whip

Ingredients
Meatballs
- 1 pack lamb mince
- 1 pack panko spice
- 1 tsp sundried tomato dressing
Couscous
- ¼ cup couscous
- ¼ cup boiling water
- ½ telegraph cucumber
- 1 tomato
- ½ pack baby spinach
- Remaining sundried tomato dressing
Feta Whip
- 30g feta cheese
- 1 Tbsp milk
To Serve
- ½ bunch parsley

Make meatballs Bring a half full kettle to the boil. In a small bowl, combine all meatball ingredients with a pinch of salt. Shape into 3 meatballs.

Prep couscous In a medium heat-proof bowl, combine couscous, boiling water and a pinch of salt. Stir, cover and leave to swell for 5 minutes.

Cook meatballs Heat a drizzle of oil in a medium fry-pan on medium heat. Cook meatballs for 6-8 minutes, turning often, until cooked through. Rest, covered, for a couple of minutes.

Prep vegetables and feta whip Dice cucumber and tomato 2cm. Crumble feta cheese into a small bowl and whisk with milk, until smooth.

Finish couscous Mix cucumber, tomato and spinach through cooked couscous. Stir through remaining sundried tomato dressing and season.

Serve feta whip on plates, then top with couscous, meatballs and parsley.
