Peri Peri Chicken with Chips and Chipotle Hollandaise

Ingredients

Chips

  • 1 bag potato chips

Chicken

  • 1 egg
  • 1 pack chicken breast steaks
  • 1 pack peri peri crumb

Salad

  • ½ bunch asparagus
  • 1 orange
  • ½ bag baby spinach
  • 1 pack ricotta cheese

Chipotle Hollandaise

  • 1 pack Hollandaise sauce
  • 1 pack chipotle sauce (optional, adults)

Steps

  1. Cook chips Pat chips dry and place on a lined oven tray with a drizzle of oil and season. Bake on middle oven rack for about 15 minutes, until almost tender. Turn oven to high grill. Grill chips for about 10 minutes, until golden and crispy. Turn once during grill time, to ensure even cooking.
  2. Prep chicken In a medium bowl, whisk together egg and a pinch of salt. Pat chicken dry and toss through egg mixture to coat.
  3. Prep and cook asparagus Remove woody ends from asparagus and cut in half. Place asparagus and a pinch of salt in a medium, heat-proof bowl and cover with boiling water. Cover with a plate and leave for 5–6 minutes, until bright gre
  4. Cook chicken Place breadcrumbs in a medium bowl and toss chicken through, one steak at a time, shaking off excess egg mixture as you go. Leave some chicken plain for fussier kids. Heat a drizzle of oil in a large fry-pan on medium heat. Cook chicken for 3-5 minutes each side (depending on thickness), until golden and cooked through. Set aside on paper towels
  5. Prep salad and Hollandaise Peel orange and dice flesh 2cm. Roughly chop spinach. Add both to bowl with drained asparagus. Crumble through ricotta, then toss with a drizzle of olive oil and vinegar. Season to taste. In a small bowl, combine Hollandaise and chipotle sauce. Keep some Hollandaise plain for kids
  6. Serve chips, chicken and salad with chipotle Hollandaise (or plain Hollandaise for the kids
