Peri-Peri Chicken Sliders with Roasties

Ingredients
Roasties
- 1 packet diced potatoes
- ½ tsp salt
Sliders
- 10 slider buns
- 1 pack chicken thighs
- 1 pack chicken slider spice mix (optional, adults)
TO SERVE
- 1 carrot
- ½ bag superslaw
- 1 tomato
- 1 pottle peri-peri mayo
- ½ bunch coriander, roughly chopped (optional, adults)

Cook potatoes Preheat oven to 230oC. Preheat BBQ hot plate and grill to high (if using). Toss potatoes on a lined oven tray with a drizzle of oil and salt. Cook on middle rack for 25-30 minutes, or until potatoes are golden and crispy. Turn once during cooking.

Prep buns Cut sliders in half and place on another lined oven tray. When potatoes have 5 minutes cook time remaining, warm buns in oven (on rack underneath potatoes) for 3-4 minutes. Alternatively, toast on BBQ grill for 1-2 minutes.

Prep chicken Pat chicken dry. Season with salt and slider spice mix. Heat a drizzle of oil in a large fry-pan on medium-high heat or use BBQ hotplate.

Cook chicken Add chicken to pan and cook for about 6 minutes each side, until just cooked through. Remove from pan/BBQ and set aside, covered, to rest. Slice thinly and toss through any resting juices.

Prep veggies Grate carrot. Toss carrot and slaw in a medium bowl with a little oil and vinegar. Season to taste. Cut tomato in half and thinly slice.

To serve Place everything in the middle of the table for everyone to help themselves. Serve plain mayo for little foodies.
