Chicken Fingers with Ghost Chips and Ant Slaw

Ingredients

Ghost Chips

  • 200g potatoes
  • 400g kumara
  • 1 carrot

Chicken Fingers

  • 1 packet chicken breasts
  • 1 pack chicken finger spice mix
  • ½ tsp of salt
  • 2 Tbsp flour
  • 1 egg
  • 1 packet panko breadcrumbs

Mustard Mayo

  • ¼ cup mayonnaise
  • 1-2 tsp wholegrain mustard

Slaw

  • 1 courgette
  • ½ bag slaw
  • 1 pack black sesame seeds (optional)

Steps

  1. Prep and cook chips Preheat oven to 230oC. Slice potatoes and kumara 0.5-1cm. Cut carrot in half widthways and slice 0.5-1cm. If you like, use a small knife to carve some scary faces into the veggies for the kids. Toss on two lined oven trays with a drizzle of oil and season with salt. Cook for 25-30 minutes, until golden and tender. Swap position of trays halfway through cooking.
  2. Prep chicken Pat chicken dry and slice into 1-2cm wide strips. Place in a medium bowl with chicken finger spice mix and salt, then toss to coat. Leave spice mix off some chicken for fussier little foodies. Sprinkle over flour and toss to coat well. In a small bowl, whisk egg and pour over chicken. Toss to coat, making sure all chicken fingers are covered in egg.
  3. Crumb chicken Place breadcrumbs in a medium bowl or plate. Lift chicken fingers out of egg and coat in breadcrumbs, one handful at a time.
  4. Cook chicken Heat a drizzle of oil in a large fry-pan on medium-high heat. Cook chicken in batches, for 2-3 minutes each side, or until cooked through. Season lightly with salt. Add more oil as needed. Turn heat down if crumb starts to burn.
  5. Make mustard mayo In a small bowl, combine mayonnaise and mustard. Grate courgette. Toss courgette and slaw in a medium bowl with a drizzle of olive oil and vinegar. Season and sprinkle with sesame seeds.
  6. To serve Place chips, chicken fingers and slaw on plates, with mustard mayo on the side. The kids may prefer tomato sauce or plain mayo.
