Beef Steaks with Mash and Creamy Mushroom Sauce

Ingredients

Mash

  • 800g potatoes
  • 250g frozen peas
  • 2 Tbsp butter
  • ½ cup milk
  • 1 bag baby spinach

Creamy Mushrooms

  • 250g mushrooms
  • 2 cloves minced garlic
  • ½ cup chicken stock
  • ½ cup sour cream

Beef Steaks

  • 600g beef rump steaks
  • 1 pack beef spice mix

Steps

  1. Make mash Preheat BBQ grill to medium-high, if using. Peel and dice potatoes 2cm. Add to a medium pot with a pinch of salt and cover with hot tap water. Cook on high heat with lid on, for 20-25 minutes, until tender. Add peas and cook a further 2 minutes until bright green. Drain. Mash with butter and milk until smooth. Fold through spinach and season.
  2. Prep mushrooms Thinly slice mushrooms.
  3. Prep beef Pat beef dry and toss with beef spice mix and a drizzle of oil. Season.
  4. Cook beef Heat a drizzle of oil in a large fry-pan on medium-high heat. Cook beef for 3-4 minutes each side for medium, depending on thickness, or until cooked to your liking. Alternatively, cook beef on the BBQ. Rest, covered, before slicing thinly, reserving any resting juices. Reserve pan
  5. Cook mushrooms Return pan to high heat with a drizzle of oil. Cook mushrooms, garlic and a knob of butter for 3 minutes. Add stock and cook a further 1 minute until tender and stock has reduced. Remove from heat and fold through sour cream and beef resting juices. Season
  6. Serve mash and sliced beef topped with creamy mushroom sauce.
