Vietnamese Pork & Noodle Bowl

Ingredients

Pork

  • 300g pork sirloin steaks
  • 2 tsp grated ginger
  • 1 clove minced garlic
  • 1 tsp sweet chilli sauce
  • 1 tsp fish sauce
  • Juice of ¼ lemon

Noodles

  • 100g vermicelli noodles
  • 1 apple
  • ½ telegraph cucumber
  • ½ cos lettuce
  • ½ bunch mint, chopped
  • 50g mung bean sprouts
  • 1 tsp fish sauce
  • 75g Vietnamese dressing
  • ¼ lemon
  • 1 pack chopped peanuts

Steps

  1. Prep pork Bring a full kettle to the boil. Pat pork dry, season and set aside. In a small bowl, combine remaining pork ingredients.
  2. Cook noodles Place noodles in a large, heat-proof bowl and cover with boiling water. Leave for 5 minutes then drain well and return to bowl.
  3. Prep veggies Thinly slice apple into matchsticks; dice cucumber 1cm; roughly chop lettuce. Add to bowl with cooked noodles, mint, mung bean sprouts, fish sauce and half the Vietnamese dressing. Toss to combine. Cut lemon into wedges.
  4. Cook pork Heat a drizzle of oil in a large fry-pan on medium-high heat. Lift pork out of marinade (reserving marinade). Cook pork for about 4 minutes each side, depending on thickness or until just cooked through. When pork has 1-minute cook time remaining, add the marinade to the pan and toss to coat. Rest, covered. Thinly slice and toss in any resting and pan juices.
  5. Serve noodles and veggies topped with pork, a drizzle of pan juices, peanuts and a lemon wedge.
