Peanut Turkey Fried Rice

Ingredients
Fried Rice
- 1 cup basmati rice
- 1½ cups water
- 1 carrot
- 1 broccoli
- 2 eggs
- 450g turkey mince
- 1 pack onion, garlic and ginger paste
- ½ bag baby spinach
Peanut Sauce
- 2 packs peanut butter
- 2-3 Tbsp GF soy sauce
- ½ Tbsp GF white wine vinegar
- 1 Tbsp GF mild sweet chilli sauce
- ¼ cup hot water
To Serve
- GF mild sweet chilli sauce
- 40g chopped, roasted peanuts

Cook rice Combine rice, water and ½ tsp salt in a medium pot and bring to the boil. Once boiling, cover and reduce to lowest heat to cook for 12 minutes. Turn off the heat and steam, covered, for a further 8 minutes. Do not lift lid during cooking.

Prep veggies When cooked, spread rice onto a tray to cool for 3-4 minutes. While rice cooks, grate carrot and cut broccoli into very small florets, then finely dice stalk. Set all aside separately. In a medium bowl, mix all peanut sauce ingredients together. Set aside.

Cook egg In a cup or small bowl, whisk eggs with a pinch of salt. Heat a drizzle of oil in a large fry-pan, on medium-high heat. Pour egg into pan and cook for about 2 minutes, until nearly set. Flip and cook a further 30 seconds, remove from pan and set aside. Allow egg to cool, then thinly slice.

Cook turkey Return pan to heat with a drizzle of oil. Cook turkey and onion, garlic and ginger paste for 3-4 minutes, until cooked through, stirring. Remove from pan and set aside

To finish Return pan to heat with a little more oil. Cook carrots and broccoli for 3 minutes. Stir through spinach and cook for a further 1 minute. Add rice, cooked turkey mixture and sliced egg to pan with peanut sauce. Toss to combine and cook for about 2 minutes, until heated through. If you don’t have a large enough fry-pan to hold all the rice and veggies, combine them in a large pot or bowl.

Serve turkey fried rice topped with sweet chilli sauce and peanuts.
