Lamb Leg Steak with Asparagus, Pesto and Basil

Ingredients
Vegetables
- 1 pack potatoes
- 1 bunch asparagus
- ½ pack cherry tomatoes
- 1 pack basil pesto
Feta Whip
- 30g feta cheese
- 1 Tbsp milk
Lamb
- 1 pack lamb leg steak
To Serve
- 1 bunch basil leaves

Prep and cook vegetables Preheat oven to 220°C. Preheat BBQ grill to medium-high (if using). Dice potatoes 2cm, then toss on a lined oven tray with a small drizzle of oil. Season and roast in oven for 20 minutes. After 20 minutes, remove tray from oven and add asparagus and tomatoes. Return to oven and cook for 6-8 minutes, until vegetables are tender.

Make feta whip Crumble feta cheese into a small bowl and whisk with milk, until smooth. Season with pepper.

Cook lamb Pat lamb dry and season. When vegetables have been added to tray, heat a small drizzle of oil in a small fry-pan, on medium-high heat. Cook lamb in pan for 2-3 minutes each side (for medium), or until cooked to your liking. Alternatively, cook lamb on BBQ. Rest, covered, for a few of minutes. Slice thinly against the grain.

Finish vegetables When vegetables are cooked, stir through basil pesto and season.

Serve vegetables topped with lamb, 1 Tbsp feta whip and basil.
