Indian Halloumi Salad with Garlic Naan

Ingredients

Halloumi Salad

  • 1 baby cos lettuce
  • 2 radishes
  • ¼ avocado
  • ½ garlic naan
  • ½ pack halloumi cheese
  • 1 pack Indian halloumi blend

To Serve

  • ½ pack Bombay aioli

Steps

  1. Prep vegetables Preheat BBQ hot plate to medium-high (if using). Separate lettuce leaves and tear any larger ones in half; quarter radishes; dice avocado 1cm. Place all in a medium bowl.
  2. Cook naan Heat a small drizzle of oil in a medium fry-pan on medium-high heat. Cook garlic naan for about 1 minute each side, until golden and hot through. Alternatively, cook naan on BBQ. Cover to keep warm.
  3. Cook halloumi Slice halloumi cheese 0.5cm. Add to a small bowl, drizzle with a little olive oil and coat in Indian halloumi blend. Wipe previous pan clean, then return to medium-high heat with a small drizzle of oil. Cook halloumi for about 1 minute each side, until golden and crispy. Alternatively, cook halloumi on BBQ.
  4. Finish salad Cut naan into 4 wedges, then add to bowl with vegetables. Toss with a small drizzle of olive oil and vinegar. Season.
  5. Serve Bombay aioli topped with naan salad and halloumi.
