Beef Bolognese Turnovers with Avocado Salad

Ingredients

Bolognese Turnovers

  • 1 brown onion
  • 2 cloves minced garlic
  • 1 pack beef mince
  • 1 pack tomato paste
  • 1 cup tomato passata
  • 1 tsp sugar
  • 1 tsp balsamic vinegar
  • 1 bunch parsley, chopped
  • 1 sheet shortcrust pastry
  • 1 egg

Salad

  • ½ Tbsp mustard
  • 1 cos lettuce
  • 1 Lebanese cucumber
  • 1 avocado

To Serve

  • Tomato sauce

Steps

  1. Cook Bolognese Preheat oven to 200oC. Finely dice onion. Heat a drizzle of oil in a large frying pan on medium high heat. Cook onion and garlic for about 3 minutes until tender. Add mince and cook for about 5 minutes, stirring until browned.
  2. Add 1 tsp salt, tomato paste and passata and cook for about 4 minutes until sauce has thickened. Remove from heat and stir through sugar, vinegar and parsley. Leave to cool slightly.
  3. Make turnovers Cut pastry into 6 squares. Whisk egg in a small bowl and brush pastry edges. Spoon ½ cup of mince mixture into the centre of each and fold over to make triangles. Seal edges of pastry with a fork.
  4. Cook turnovers Place turnovers on a lined oven tray and brush the top with egg. Bake for 20 minutes or until golden and cooked through. Rest.
  5. Make salad Whisk mustard in a large bowl with a drizzle of olive oil and vinegar. Roughly chop lettuce and thinly slice cucumber and avocado. Toss in bowl with dressing just before serving and season to taste.
  6. Serve turnovers on plates with salad and tomato sauce on the side.
