Turkey Rissoles with Cheesy Oven Fries

Ingredients
Fries
- 600g pre-cut potato chips
- ½ cup grated cheese
Rissoles
- 1 courgette
- 1 pack turkey mince
- 1/3 cup panko breadcrumbs
- 1 pack turkey spice
- 2½ tsp soy sauce
Salad
- ½ telegraph cucumber
- ½ bag baby spinach leaves
To Serve
- 1 pack tomannaise

Cook fries Preheat oven to 220oC. Toss potato chips on a lined oven tray with a drizzle of oil. Season and bake for about 25 minutes, turning halfway to ensure even cooking. Sprinkle over cheese and cook a further 5 minutes, or until cheese has melted. Grate courgette.

Make rissoles In a large bowl, mix together all rissole ingredients with ½ tsp salt. Using a ¼ cup measure and clean, damp hands, shape mixture into balls. Flatten balls to 1cm-thick patties and set aside.

Cook rissoles Heat a drizzle of oil in a large fry-pan on medium heat. Cook rissoles in batches, for about 1 minute each side, until golden. Push fries to one side of tray and place rissoles on the other side, to finish cooking in oven for about 3 minutes, or until cooked through.

Make salad Dice cucumber 1cm and roughly chop spinach. Toss all in a medium bowl with a drizzle of oil. Season to taste.

Serve rissoles, fries and salad with a dollop of tomannaise on the side.
