Chermoula Lamb Leg Steak with Orzo, Feta and Peas

Ingredients
Lamb
- 1 pack lamb leg steak
- 1 pack chermoula lamb spice
Orzo Salad
- 1 pack orzo pasta
- ½ cup frozen peas
- 1 tomato
- ½ bag baby spinach *
- 1 pack tomato dressing
To Serve
- 1 tsp chermoula mayo
- 1 tsp feta cheese
- ½ bunch mint *

Prep lamb Preheat BBQ grill to medium-high (if using). Bring a small pot of salted water to the boil. Pat lamb dry, then season and coat with a small drizzle of oil and chermoula lamb spice.

Cook pasta and peas Cook orzo pasta in pot of boiling water for about 8 minutes, until tender. Add peas for final 3 minutes of cook time. Drain well and return to pot.

Cook lamb Heat a small drizzle of oil in a small fry-pan on medium-high heat. Cook lamb for 2-3 minutes each side for medium (depending on thickness), or until cooked to your liking. Alternatively, cook lamb on BBQ. Rest, covered, for a few minutes. Slice lamb thinly against the grain.

Finish orzo Finely dice tomato and thinly slice spinach, then place in a medium bowl. When orzo and peas are cooked, add to bowl with vegetables, along with tomato dressing. Toss well and season.

Serve chermoula mayo topped with orzo salad, lamb, feta cheese and mint leaves.
