BBQ Pork Ribs with Potato Salad

Ingredients

Potato Salad

  • 800g baby potatoes
  • 2 Tbsp butter ^
  • ½ red onion
  • 1 bunch parsley
  • 1 capsicum
  • 1 Tbsp mustard ^

Slaw

  • ¼ cabbage *
  • 2 carrots
  • 1 pack ranch dressing

BBQ Pork Ribs

  • 1 pack marinated pork ribs
  • 1 bottle Culleys BBQ sauce

Steps

  1. Cook potatoes Preheat BBQ grill to medium. Cut potatoes into halves or quarters until roughly the same size. Cook in pot of salted water, with the lid on, for about 20 minutes, until tender. Drain and toss with butter.
  2. Prep salad Finely dice onion; roughly chop parsley; dice capsicum 1cm. In a large bowl, whisk mustard with a large drizzle of vinegar and olive oil. Add onion, parsley, capsicum and cooked potatoes to bowl with dressing and toss to combine. Season to taste.
  3. Prep slaw Finely shred cabbage until you have 2-3 cups worth and grate carrots. Add to a medium bowl, along with ranch dressing. Toss to combine and season to taste.
  4. Cook ribs Grill ribs on BBQ for 5 minutes each side, then baste with a dollop of BBQ sauce and continue cooking for a further 10 minutes, turning every 2 minutes, until meat is glazed and tender. Baste each side twice.
  5. Use a sharp knife to separate ribs, with a gentle sawing motion to cut down between the bones.
  6. Serve BBQ pork ribs, potato salad and slaw between plates. Serve any remaining BBQ sauce on the side.
