Venison Burgers with Caramelised Onions and Fries

Ingredients

Fries

  • 600g potatoes
  • 2 carrots

Caramelised Onions

  • 1 red onion
  • 1 Tbsp sugar
  • 1 Tbsp balsamic vinegar
  • 2 tsp water

Venison Burgers

  • 600g venison and cranberry mince
  • 6 burger buns
  • 2 tomatoes
  • ½ iceberg lettuce *
  • 1 pack feta cheese

To Serve

  • ¼ cup tomato sauce (optional)
  • ½ pack horseradish mayo

Steps

  1. Cook fries Preheat oven to 220oC. Preheat BBQ hot plate, if using. Cut potatoes and carrots into 1cm thick fries. Toss on a lined oven tray with a drizzle of oil. Season and roast for 25–30 minutes, until golden. Turn once during cooking.
  2. Make onions Thinly slice onion. Heat a drizzle of oil in a small pot on high heat. Cook onion for about 5 minutes, or until soft. Add sugar, vinegar and water and cook for 2 minutes, until sticky. Remove from heat and set aside, covered.
  3. Prep and cook patties Divide mince into 6 pieces and shape into patties about 1.5cm thick. Season. Heat a drizzle of oil in a fry-pan on medium heat. Cook patties for about 4 minutes each side, or until just cooked through. Rest, covered. Alternatively, cook patties and buns on BBQ.
  4. Heat buns and prep veggies Slice burger buns in half horizontally and place, closed, on an oven tray. Warm in oven for 4–5 minutes. Slice tomatoes 0.5cm; thinly slice lettuce; crumble feta into a bowl.
  5. Serve buns filled with a patty, veggies, feta, caramelised onion and tomato sauce or horseradish mayo. Serve fries on the side.
