Lamb Kofta with Kumara Rounds and Hummus Dip

Ingredients
Kumara Rounds
- 600g kumara
- 1 pack sumac (optional, adults)
Lamb Kofta
- 450g lamb mince
- 1 pack Greek lamb spice mix
Salad
- 1 tomato
- ½ telegraph cucumber *
- ½ cos lettuce *
Hummus
- 1 pack hummus

Cook kumara Preheat oven to 230oC. Preheat BBQ hot plate to medium-high (if using). Cut kumara into 0.5cm thick rounds. Toss kumara rounds on a lined oven tray with a drizzle of oil and sumac. Season with salt and bake for 20-25 minutes, until tender. Turn once to ensure even cooking.

Make kofta Mix lamb, Greek lamb spice mix and ¼ tsp salt together in a medium bowl. Using a tablespoon measure, scoop out lamb mix and roll into golf ballsized balls, then flatten slightly so they are about 1cm thick.

Cook kofta Heat a little oil in a large fry-pan on medium-high heat. Cook kofta for 2-3 minutes each side, until golden and cooked through. Alternatively, cook kofta on BBQ hot plate as per instructions above.

Prep salad Dice tomato and cucumber 1cm and roughly chop lettuce. Add all to bowl with a drizzle of oil and vinegar, toss to combine and season to taste.

Serve kumara, kofta and salad with a dollop of hummus.
