Beef Steak with Grilled Veggies and Hollandaise Sauce

Ingredients

Beef

  • 1 pack beef sirloin steak
  • 1 pack beef spice mix

Veggies

  • 800g kumara
  • 2 courgettes
  • 1 pack baby capsicums
  • ½ pack baby spinach *

To Serve

  • 1 pack Hollandaise sauce
  • 1 pack sliced almonds

Steps

  1. Prep beef Preheat BBQ hot plate and grill to medium. Bring a large pot of salted water to the boil. Pat beef dry and rub with beef spice mix and a drizzle of oil. Season.
  2. Cook kumara Cut kumara into 3cm wedges and cook in pot of boiling water for about 12 minutes, until just tender. Drain well. Drizzle with oil and set aside to BBQ.
  3. Cook beef Cook beef on hot plate, fat side down, for about 5 minutes. Transfer to grill and continue to cook for 30-40 minutes, turning every 10 minutes, for medium (depending on thickness), or until cooked to your liking. Rest, covered.
  4. Prep veggies Slice courgettes 1cm on an angle and capsicum in half or quarters. Drizzle with oil and season.
  5. Cook veggies When beef has 5 minutes cook time remaining, cook kumara on BBQ hot plate for about 10 minutes, until golden. Turn regularly to ensure even cooking. Add courgettes and capsicum to hot plate and cook for about 3 minutes, until just tender.
  6. To finish Toss veggies with spinach in a large bowl. Slice beef thinly against the grain.
  7. Serve beef and veggies topped with Hollandaise and almonds.
