Gai Yang Chicken with Asian Rice and Lime Ponzu

Ingredients

RICE

  • 150g Japanese brown rice
  • 1 cup frozen corn *

STIR-FRY

  • ¼ red onion, finely diced *
  • 1 clove garlic, minced
  • 1 baby cabbage, thinly sliced until you have 2 cups worth
  • 1 capsicum, diced 1cm
  • 3 Tbsp lime ponzu dressing
  • ¾ tsp sesame oil ^
  • 1 Tbsp rice wine vinegar ^

CHICKEN

  • 1 pack lean chicken breasts
  • 2 tsp grated ginger *
  • 1 tsp honey ^

TO SERVE

  • ½ bunch coriander, chopped *
  • 1 Tbsp lime ponzu dressing
  • 1 pack chopped peanuts

Steps

  1. Bring a medium pot of salted water to the boil. Preheat BBQ grill or hot plate to mediumhigh (if using).
  2. Cook rice. Cook rice in pot of boiling water on medium-high heat, for about 12 minutes. Add corn and cook a further 3-4 minutes, until rice is tender. Drain well.
  3. Prep & begin stir-fry. Heat ¾ tsp oil in a non-stick fry-pan on medium-high heat. Cook onion and garlic with a pinch of salt for 2-3 minutes, until softening. Add cabbage, capsicum, first measure of ponzu dressing, sesame oil and vinegar. Transfer to a large bowl and cover, to keep warm. Wipe pan clean and reserve.
  4. Prep chicken. Pat chicken dry and cut into steaks. Place hand on top of chicken and slice through horizontally. In a medium bowl, mix chicken, ginger and honey with 1 tsp oil and ½ tsp salt.
  5. Cook chicken. Heat reserved pan on mediumhigh heat. Cook chicken for 3-5 minutes each side (depending on thickness), or until cooked through. Alternatively, cook on BBQ.
  6. Rest chicken, covered then slice thinly, reserving resting juices.
  7. Finish stir-fry. Toss cooked rice through stir-fry vegetables and season.
  8. Prep coriander.
  9. Serve rice stir-fry topped with chicken, any resting juices, second measure of ponzu dressing, coriander and peanuts.
